How to make Pokeball Cookies | Cooking

Inspired by the GBBO biscuit week.. yeah sorry I know I’m a couple of weeks behind… combined with my obsession with Pokemon Go, I decided to make some Pokeball iced biscuits. These are super easy, but look super effective… hope you enjoy!

Equipment needed:

Mixing bowl
Scales
Hand mixer/stand mixer
Rolling pin
No 1.5 or 2 piping tube
Piping bags
Cocktail sticks or toothpicks
Round cutter
Baking Tray

Oven at 180C or 160C fan

Biscuit ingredients:

150g cold butter – cubed
150g caster sugar
300g plain flour
1/4 tsp salt
1 large egg
1 tsp vanilla extract
White Chocolate Buttons

Rub together butter, flour, salt and sugar until resembles breadcrumbs
Mix in egg and vanilla
Bring together into a dough
Knead until smooth
Rest in fridge 1/2 hour
Roll and cut out to desired shape, place on greased and lined baking tray
Rest in fridge for 15 minutes
Bake for 15-17 until golden then cool completely

Royal Icing recipe:

3 egg whites
Big bag of icing sugar

Whisk together using a stand or hand mixer
It should be quite stiff (Hold a peak) and look quite dull when its done
If its running after about 5 minutes, slowly add more icing sugar
If its too stiff, add a tiny amount of water
