How to make Jaffa CupCakes | Cooking

After asking about on my facebook page (, I got asked to make Jaffa cake inspired cupcakes. A trawl around the internet later, I’ve combined a few different things…. hope you like the outcome!!

— Jaffa Cupcakes —

110g butter
110g caster sugar
2 eggs
1tsp vanilla essence
175g self raising flour

Preheat oven to 180 C
Line a 12 hole muffin tin with papers
Cream butter and sugar
Add vanilla
Whisk in eggs
Sift in flour
Spoon small amount into paper case, top with 1 tsp marmalade, then top off with more mixture
Cook on middle shelf for 20 – 25 minutes

— Orange Butter Cream —

2 cups icing sugar
1/2 cup (113g)soft unsalted butter
1 tsp orange zest
2 – 4 tsp orange juice

Stick it all together in a bowl and beat the arse out of it until fluffy and smooth
Prepare piping bag with chosen nozzle and fill with prepared butter cream
Pipe swirl onto top of cupcake

— Orange Chocolate Ganache —

120g dark chocolate
3/4 cup heavy cream
1 tsp finely grated orange zest
1 tbsp unsalted butter
1 tsp orange essence

Warm milk (don’t boil)
Add chocolate and allow to melt before mixing
Stir in butter until melted
Add in orange essence and orange zest
Prepare piping bag with chosen nozzle and fill with prepared ganache
Pipe on top of orange butter cream

I topped mine with Jaffa chocolates, but these are difficult to get hold of outside of New Zealand.
